  Cougar Kitchen Recipes
 
Our program is really "big" on teaching students Life Skills. We do cooking activities with our students on a monthly basis. The In-House cooking activities that we do with our students are for all our students  (regardless of their age) and their families. Every month we will place recipes that we are doing with our students at the center so you can enjoy these wonderful dishes with your family! Ice Cream Cone Muffins

Ingredients

Pancake Mix: 4 cups

Eggs: 2

Milk: 2

Sugar8 tbsp

Vegetable Oil: 2/3 cup

Fruit: Fruit Preserves (any)

Large Bowl

Spoon

Oven

Ice Cream Cones: 1 box

Cooking Instructions:

  • Step 1

Crack your eggs in to a bowl and make sure you remove any shells. It is best to do this first; otherwise you will have trouble seeing the shells among the other ingredients.

  • Step 2

Add your milk, sugar and vegetable oil to the bowl. Stir to combine all of these ingredients.

  • Step 3

Add the pancake mix and stir to combine. The mix will be a little thick, but it will be moist. Try to make sure that you don't have too many lumps. Some lumps are okay, but it is no fun to bite in to a muffin and get a patch of dry pancake mix.

  • Step 4

Place muffin cups in your muffin pans. If you don't have any you can always grease the muffin pans so that the muffins come out without sticking to the pan.

  • Step 5

Fill each of the muffin cups up 1/4 of the way.

  • Step 6

Spoon half a teaspoon of the apple preserves in the muffin cups.

  • Step 7

Add another layer of muffin mix to the muffin cups so that the cups are now half full.

  • Step 8

Spoon another half of a teaspoon of apple preserves on each muffin. Then finish the muffins off with a final layer of muffin mix. This should bring your muffin cups to 3/4 of the way full. The muffins will rise in the oven so you don't need to fill them all of the way.

  • Step 9

Set the muffins in the oven at a temperature of 425 degrees for 15 minutes. Muffins should be slightly golden brown on the top.

  • Step 10

Allow the muffins to cool. Fill cone with fruit place muffin on top.


Fried Ice Cream



Ingredients:


1pt. vanilla ice cream

½ c. crushed corn flakes (crushed)

1tsp. cinnamon

2tsp. white sugar

1tsp. brown sugar

1 egg

Vegetable oil





Cooking Instructions:


  • Step 1-Scoop out 5 little balls of vanilla ice cream (use ice cream scooper) onto plate or cookie sheet.

  • Step 2- Return them to the freezer for approximately 20 min.

  • Step 3-During this time mix the crumbs, cinnamon and sugar together.

  • Step 4-When 20 minutes is up take the frozen ice cream balls and roll them in the mixture.

  • Step 5 Return them to the freezer for another 20 min.

  • Step 6-Beat the egg and take the ice cream balls out the freezer and dip them into the egg mixture.

  • Step 7-Then roll the ice cream balls in the coated mixture again.

  • Step 8-Freeze them again for about 1 hour or until firm.

  • Step 9-Heat oil in a deep fryer or a deep pot to 350 degrees (oil must cover the balls.) Place frozen balls in the oil and fry about 5 or 10 seconds.

  • Step 10-Take a spoon and take them out and drain on a dish.

  • Step 11- Drizzle with caramel sauce or anything you like.
